I picked four fat cucumbers from my garden the other day.  This is my first time growing cucumbers – in fact my very first time growing a garden of my own.  I’ve never before tasted cucumbers this fresh from the plant.  They were crisp, sweet, and perhaps – no, definitely – the best cucumbers I’ve ever tasted.

1/3 cup crystallized ginger coarsely chopped
2 cups all-purpose flour
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 teaspoon finely grated fresh orange zest
1 teaspoon sel gris
1 teaspoon baking soda
1/2 teaspoon baking powder
2 cups coarsely grated zucchini (2 medium)
3/4 cup antara olive oil

3/4 cup 1000 flower honey
2 large eggs, lightly beaten
1 teaspoon Rains Choice Mexican Vanilla

1 LB whole milk ricotta cheese
8 ounces mascarpone cheese
1/4 cup Vanilla Sugar
1/2 cup granulated sugar
zest of one lemon
2 LBS strawberries, hulled and cut into quarters
1/4 cup 10 year Riserva Rovere Balsamic Vinegar
